Directions:
- Wash the squid very well and remove the bone and ink bag.
- Fry the onions in the oil until transparent.
- Add the tomatoes, mint, parsely, and 2 cups of water.
- When it comes to a boil, add the rice and continue to cook for another 15 minutes.
- Stuff the squid with the mixture and place in an oiled baking dish.
- Add a little tomato juice and bake in a medium oven for about 35 minutes.
