Greek Food - Recipe: Kalamarakia Yemista


  Kalamarakia Yemista
Stuffed Squid

Ingredients:
1-2 Pinch Mint (Finely Chopped)
4-6 oz Olive Oil
2 Medium Onion (Sliced)
1 Tablespoon Parsley
1-2 Pinch Pepper (To Taste)
1 3/4 Cup Rice
2-3 Pinch Salt (To Taste)
2.20 lb Squid
2 Small Tomatoes (Finely Chopped)
  Directions:
  • Wash the squid very well and remove the bone and ink bag.
  • Fry the onions in the oil until transparent.
  • Add the tomatoes, mint, parsely, and 2 cups of water.
  • When it comes to a boil, add the rice and continue to cook for another 15 minutes.
  • Stuff the squid with the mixture and place in an oiled baking dish.
  • Add a little tomato juice and bake in a medium oven for about 35 minutes.
